Churrasco, which means barbeque, is a tradition for more than three centuries in a region in southern Brazil, known as the Pampas (High Plains). The old gauchos (local ranchers) cooked large portions portions of poultry, pork and beef on skewers over an open fire pit. This original and unique way of roasting meat conserved the characteristic taste of each portion, leaving the cuts full of their natural juices and flavors.
